Ingredients:
1/3 cup butter
1/2 cup sugar
2 eggs
1-3/4 cup sifted flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe banana
1/2 cup chopped walnuts
1.) Cream butter and sugar.
2.) Add eggs and beat well.
3.) Sift dry ingredients.
4.) Mash bananas.
5.) Add dry ingredients to creamed mixture, alternating with mashed banana, and blending well after each addition.
6.) Stir in nuts.
7.) Pour into well greased 9x5x3 loaf pan.
8.) Bake at 350 degrees for 45 minutes (may be more or less time depending on oven).
9.) Cool on wire rack completely before slicing and eating. This bread freezes well.

Applesauce
Ingredients:
Apples (preferrablely a mixed variety)
Water
Cinnamon
1.) Peel and dice apples
2.) Place in large saucepan with a small amount of water. Don't cover the apples with water.
3.) Boil apples and water until apples are mushy but not completely disolved. There should be small chucks of soft apple in the sauce. Add a very small amount of cinnamon to season.
4.) The best texture for the sauce looks like the picture below.
5.) Place the apple sauce in a storage container and refigerate. The sauce is delicious served cold.

Chop Suey
Ingredients:
Pork Chops
Fresh Bean Sprouts
Fresh Mushrooms
Celery
Corn Starch
Salt
Cooked Rice
1.) Wash vegetables. Slice mushrooms and celery.
2.) Slice pork chop meat into thin strips. Then brown in large pan.
3.) Mix enough corn starch and salt together to thicken and season. Mix with water and set aside.
4.) Add vegetables to browned meat. Then add corn starch and salt mixture. Cook until thickened. Don't over cook vegetables.
5.) Serve with rice.
6.) Enjoy!

Roasted Boneless Skinless Chicken Breast
1.) Place bonelss skinless chicken breast on a piece of aluminum foil.
2.) Cover the chicken with a piece of parchment paper. The parchment replaces the chicken skin and keeps the chicken moist and tender, similiar to chicken roasted with skin on it.

3.) Place on a baking sheet and roast in a 375 degree oven for 25 to 30 minutes. Let the chicken rest at room temperature for least ten minutes before serving
4.)The finished chicken is delicious hot or cold and can be served with an endless variety of side dishes. Below it is served with rice and cabbage with mayonaise.
