Danish Nut Roll


Pastry Ingredients:
1-2/3  cups flour
1/3 teaspoon salt
2/3 cup butter
1 teaspoon yeast
1 tablespoon sugar
1/3 cup warm water
1 egg

Filling Ingredients:
2/3 cup ground walnuts
2/3 cup granulated sugar
1/3 cup melted butter

Icing Ingredients:
1 cup powdered sugar
1/4 teaspoon vanilla extract
1-1/2 tablespoons water


1.) Sift flour and salt together in a bowl, and cut butter into flour as for a pie crust.

2.) Mix yeast, sugar, and warm water in bowl. 


3.) When yeast is dissolved and active, add beaten egg.
 4.) Add egg/yeast mixture to flour/butter mixture and mix until well blended.
5.) Gently shape into a ball, cover with plastic, and refrigerate overnight.
6.) Divide chilled dough into two parts.  Roll out the dough to a 10 x 13 inch rectangle.
7.) Grind or chop walnuts to fine texture.
8.) Mix walnuts with sugar and melted butter.
9.) Spread half the walnut filling on the dough.
10.) Roll up dough.
11.) Put the rolls on a cookie sheet, cover, and let rest for 30 minutes.  Then bake in a 350 degree oven for 30 minutes.
12.) The rolls will split while baking and some filling will leak onto the cookie sheet.  So once or twice while they are baking use a spatula to push them into shape.
13.) When the rolls have cooled.  Sift powdered sugar into a bowl and stir in vanilla and water, then drizzle over rolls.
14.) The finished product.
